I'm currently trying to do this. I looked at these instructions:

http://www.ibtimes.co.uk/windows-10-how-disable-automatic-updates-1517681

But the same commands don't get the same menus on my system for some reason. So I went to View Advanced System Settings >> Hardware >> Device Installation Settings and selected "No (Your device may not work as expected)."

Does that cover it?

AFAIK.

I also went into Settings >> Update and Security >> Advanced Options and selected, "Notify to schedule restart."

Because I think there's something about windows downloading updates while browsing otherwise.

The reason I did it is because my GPU core clock started fluctuating and I spent a lot of time trying to figure out what it was. I had to use DDU to uninstall the driver fully and reboot in safe mode before doing a clean install of same driver, which fixed it. Windows 10 is automatically downloading bits and pieces that are causing problems. It just is. Go ask on Nvidia or AMD forums and they'll tell you the same thing, it isn't just me.
