The above videos were done with Harry's Laptimer (as noted in the lower left corner), presumably running on a phone and synced with the video (pretty typical). http://www.gps-laptimer.de/
Solostorm is another similar product focused on autocrossing, but works for track days, too. My co-driver has it set up on a phone or a tablet, and then syncs it with video from an array of GoPro cameras. https://www.petreldata.com/?v=7516fd43adaa
We've messed with a product called RaceRender, too, but it seems very focused on track days and has some features/bugs that make it pretty useless for autocross. http://racerender.com/Products/index.html
Some of the new cameras have software/hardware built in, like the Garmin VIRB.
